In a medium bowl, make 2 flax eggs by adding 2 Tbsp of ground flaxseed & 6 Tbsp water then mix & let sit for about 5min.
In the meantime, place 1 cup of walnuts into a high-speed blender or food processor. Blend just enough to form a flour consistency then place in a medium bowl (separate from the flax egg).
Repeat step #3 for 1/2 c of the coconut. Add the desiccated coconut to the bowl with the walnut flour. Chopp the chocolate and add the remaining dry ingredients to the bowl and mix.
Add the remaining wet ingredients to the flax-egg mixture & stir again. Next, pour the wet ingredients into the dry & mix.
Place parchment paper into a bread tin (9x5 in or so) and pour the mixture into the tin. Place in the oven and bake for about 30-40 minutes. *Keep an eye on them! They may take more time depending on your oven. Top with flaky sea salt and enjoy with someone you love.
